Keera Vade/Spinach Vade: An Easy Snack for Crunchy Bites

Organic Kitchen’s Keera Vada (කීර වඩේ/ Spinach Vada) a crispy savory vegan snack made with Wheat flour, Greens (Keera) Onions and Chilies that’s served with tomato/coconut chutney. Keerai vadai is deep-fried crispy appetizer that has a variety of greens going into it. Vadai is a distinct food of South Indian culture. Keerai in Tamil means ‘green leafy vegetable’ and Vade or Vadai means ‘savory doughnut”.

Ingredients:

1. Keera (Ponnangani) 50 g
2. Wheat Flour - 500g
3. Chopped Curry Leaves
4. Yeast - 1 table spoon
5. Coconut Oil
6. Chopped Green Chili - 6 No’s
7. Chopped Big Onions - 2 No’s
8. Sugar - 2 tea spoon
9. Cumin Seeds - 2 table spoon
10. Warm water - 2 table spoon
Add sugar and yeast (as required) into the warm water. Let the yeast get active . Pour the yeast into the flour and add some salt. Gradually add some cool water and mix the flour well. Let the flour for 3 hours closed by a wet towel.
Press and release the air in the mixed flour. Then add the greens (Keera, Chopped Chili, Onions, Cumin Seeds and Curry Leaves) in to the flour mix as shown.
Resize the flour mixture with a size of a golf ball as shown.
Apply some coconut oil in your palm. Then make the four balls into the shape of Keera Vada using fingers.
Pour coconut oil in the hot pan and let it for 1 minute. Deep fry the raw Keera Vada in medium flame. Flip the Vada for every 30 seconds until fine fried and keep frying until it turns into golden brown color. That’s it, your home made healthy Keera Vada is ready!
